1.Slice spaghetti squash lengthwise carefully.
2. Scoop out the seeds.
3. Drizzle with olive oil, salt and pepper.
4. Roast in oven at 460 degrees for 30-35 minutes for small squash and 45-50 minutes for large.
5. Let the squash cool.
6. Take a fork and move through squash and remove the strands.
7. Drain the squash over a colander.
8. Serve with your favorite sauce and top with grated Parmesan cheese.
