tofu with ginger soy sauce (aka tofu that tastes good!!)

Ingredients

1 package extra firm tofu

1 Tbsp minced ginger

1/4 cup gluten free soy sauce or tamari

2 tsp sesame oil

1 Tbsp maple syrup

2 Tbsp brown sugar

1 Tbsp gluten free cornstarch

Directions

Open package of tofu and drain water. Wrap tofu block in paper towels or a thin, clean kitchen towel. Replace paper towels until very little water is saturating the towels.

While the tofu is draining, prepare the sauce by combining all the other ingredients together in a bowl. Mix well until there are no clumps from the cornstarch.

Slice the tofu into dice sized pieces.

Heat a large saucepan with sesame oil. Saute the tofu until it is slightly browned on all sides. Then, start to drizzle the sauce over the tofu. The sauce will start to thicken as it heats up in the pan. Gently toss tofu with sauce. You will likely have extra sauce remaining.

Serve the tofu over rice or gluten free noodles with vegetables.
