slow cooker rotisserie chicken soup

ingredients

1 plain cooked rotisserie chicken (ensure no seasonings such as onion or garlic powder have been added if following FODMAP diet)

10 cups water

5 large carrots, peeled and chopped

2 celery stalk, sliced

2 bay leaves

8-10 whole peppercorns

1/2 tsp salt

1 handful flat Italian parsley, chopped

2 cups cooked brown rice

directions

Remove meat from the rotisserie chicken and set aside. Add water to your slow cooker. Add bay leaves, peppercorns, salt and 1/2 of the celery and carrots. Add the chicken carcass. Don’t worry if some of the chicken is still left on the carcass.

Cook on high in your slow cooker for approximately 3 hours. Strain the broth to remove vegetables, bay leaves and peppercorn. Discard.

Chop removed chicken meat into bite size pieces. Add the remaining carrots, celery, chopped parsley, chopped chicken, and cooked brown rice. Allow to cook on high for another 1-2 hours until vegetables are tender.

Add additional salt and/or pepper according to taste.
